Ropa Vieja
This is based on a recipe for shredded chicken I got out of a e-cookbook. Both kinds of meat are good, and it's really amazingly simple!
INGREDIENTS
3 lbs. flank or skirt steak
1 16 oz. jar of salsa (I used a chipotle salsa)
1 envelope taco seasoning
1/4 cup lime juice
1 bunch cilantro, stems removed and roughly chopped
Mix the salsa, taco seasoning, lime juice and cilantro in a slow cooker. Add the steak and turn to coat. Cook on low for about 8 hours.
Towards the end of the cooking time, use a wooden spoon to separate and shred the meat. (It's so tender a wooden spoon is all it takes!)
You can use this as a filling for any sort of Mexican food, or whatever you want.
