Slow Cooker Pot Roast
I found myself with all the ingredients to make a pot roast, but no time to do it today. Cooking it in the slow cooker provided the solution, and it came out deliciously moist and tender. My daughter had the idea of using Montreal Steak seasoning with it, and once again her instinct for seasoning proved quite sound.
Ingredients
2 lb eye of round roast
Montreal Steak seasoning to taste
1 medium onion
4 red skin potatoes
2 carrots
2 stalks celery
1 cup beef broth
1 6 oz can tomato juice
Directions
Place the roast at the bottom of a slow cooker and season to taste with the Montreal Steak seasoning. Slice the onion into quarters and place around the meat. Cut the the potatoes into halves or quarters, depending on size, and place atop the roast. Cut the carrots into chunks and place atop the roast. Thinly slice the celery and add to the pot. Pour 1 cup beef stock, and 6 oz. can tomato juice over all. Put on the lid and cook on high for about 5-6 hours, or on low for around 8 or 9.
