Green Beans with Bacon and Onions
A recipe my mother often serves at special dinners. You can add thin strips of red bell pepper if you wish. This goes with practically anything.
2 lbs fresh green beans, washed and ends snapped off.
1 medium onion, diced or minced
about 4-5 slices hickory smoked bacon, cut into matchsticks
Salt and pepper
Saute the bacon until it starts to give up its fat, then add the onion. Continue to cook until the bacon is crisp and the onion is translucent. Add the green beans and a little water to steam. Add salt and pepper to taste, stir and put the lid on to steam. Continue to cook until the green beans are crisp-tender. Serve.
