Pasta with Bacon and Salsa
This is a recipe my daughter sent me this evening. She made it for my ex-husband, her father, who I'm quite sure loved it since it contains two of his favorite foods- bacon, and Herdez Salsa!
1/2 box penne pasta
10 cherry tomatoes, cut into 1/4 inch slices
1/2 a red bell pepper
4 slices thick cut bacon, sliced
3 mushrooms
2 cups spinach
1/4 cup Herdez salsa
Shredded mozzarella cheese to top
Cook the pasta to al dente. While it is cooking, saute the bacon in a saucepan for about five minutes, or until it gives up its grease, and add the salsa. Cook for 4 minutes, then add pepper, cook two minutes and add mushrooms. Saute until tender, around 2-3 minutes, then add the tomatoes. Saute 1-2 minutes, then add the spinach. Saute about 8 minutes until the spinach has cooked down and the sauce heated through. Add 1/2 cup water and simmer. Add salt and pepper to taste. Serve over the pasta and top with mozzarella cheese.
