Pasta Sauce with Fresh Tomatoes

This is just a way to change a basic sauce into something a little better.

INGREDIENTS

1 large onion, chopped
2 lbs fresh Roma tomatoes, chopped
3T olive oil
3 cloves garlic
1/4 cup roasted red pepper strips
1/4 cup pesto
1 lb lean hamburger meat (I used 4% fat)
1/2 t red pepper flakes
1 jar basic pasta sauce, or 1 28oz. can tomato sauce
Shredded parmesan to top.

Saute the onions and garlic in the olive oil.  When they are soft and translucent, add the tomatoes.  Cook over low heat until the tomatoes are soft but still retain their shape.  Add the pepper strips, pesto and pepper flakes and continue to cook over low heat while you brown the ground beef and boil the pasta according to the instructions on the box.  Add the browned meat and the sauce to the tomato mixture, and heat through.  Either mix the sauce in with the drained pasta, or ladle on top depending on your preference.  Sprinkle with parmesan, and serve.
