Oven Fried Chicken Breasts

This is more a method for cooking chicken than a traditional recipe.  Doing most of the cooking in the oven results in a juicier chicken breast.  The breading can be changed around, and other things can be added during the baking portion. 

4 Boneless skinless chicken breasts
olive or avocado oil
plain breadcrumbs
italian seasoning
salt and freshly ground pepper

What the oil in a skillet on the stovetop.  Place the bread crumbs, and spices in a zip lock bag and shake to combine.  Add the chicken breasts on or two at a time and shake to coat.  Place the breasts in the skillet and saute until light brown.  Transfer to a covered casserole and cook in a 350° oven for about 30 minutes, or until cooked through.  I check for doneness by cutting into the center of one of the breasts and checking for any pink.
