Plum Pie
Costco had wonderful plums for sale again. This year, I made a pie. The recipe comes from Art of the Pie, by Kate McDermott.
6 cups (about 12) plums, pitted and quartered
3/4 cup sugar
Pinch of nutmeg
1/2 t salt
2 T orange liqueur
1/3 cup flour
1 T quick cooking tapioca
Pastry for two pie crusts*
Sugar, for sprinkling on top of the pie
*use whatever recipe you like, or cheat, like I did and buy premade crusts. One of these days, I’m going to attempt a butter and lard crust.
Preheat the oven to 425f. Combine the first seven ingredients in a mixing bowl, and pour into the bottom crust of the pie. Dot with a little butter if you like. Roll out the top crust and place over the filling, pinching it together with the bottom crust. Wrap some aliminum foil around the edges of the pie to prevent it from browning too much.
Bake for 20 minutes at 425, then reduce the heat to 350. Bake an additional 30-35 minutes, until the filling is bubbling. If it isn’t bubbling, turn the heat back up to 450 for around 5 minutes or so. Sprinkle the sugar over the top of the pie when there is about ten minutes of baking time left.
Allow to cool as long as possible.
