Lemony Baked Cod
I happened to find a nice piece of cod at the grocery store, and this is what I did with it. I served it with boiled potatoes and steamed broccoli for a simple, healthy dinner.
INGREDIENTS
10 oz. Cod, thawed
Lemon infused olive oil
Penzey's Justice seasoning
Himalayan pink salt mixed with herbs.
Preheat the oven to 400°. Rinse the fish, cut it in half, and place it on a foil covered baking sheet. Drizzle with the oil, and sprinkle with the seasonings. Bake about 20 minutes until the fish flakes easily. Serves 2.
