I expect this recipe would be every bit as good if one used the same weight of textured vegetable protein. The nutrition numbers would change, however. This is a recipe I made up from items I had around the house. It's quite good!
1 1/2 lb ground beef
1 med. onion, chopped
1 cup frozen peas
1 cup mixed vegetables
1 can condensed Golden Mushroom soup
2 T Italian Seasoning
1 cup shredded Mozzarella
3 cups mashed potatoes
Preheat Oven to 375F
Brown the ground beef and the onion. Add frozen vegetables, and cook until heated through. Add Golden Mushroom soup (no water) and Italian seasoning. Simmer about 5 minutes.
Spray a baking pan with non-stick coating, and spread the hamburger mixture on the bottom layer. Sprinkle with 3/4 cup cheese. Top with mashed potatoes, the remaining cheese and sprinkle with paprika.
Cook for 30 minutes.
