Fajitas

 


This is a recipe I developed myself many years ago.  I have no idea if it’s close to authentic, but it’s certainly good!

MARINADE

1/2 cup lime juice

1/4 cup tequila

1 small can chipotles in adobo sauce

Slice the chipotles and mix all ingredients together in a large ziplock bag.  Then add the following

1- 1 1/2 lbs chicken breast or steak, sliced in strips

Allow to marinate in the refrigerator for 4 hours to two days.

When it’s marinated, slice two red and/or green bell peppers and two medium onions.  Set aside.

Heat about 2 T avocado oil in a large fry pan or wok.  Add the meat and a little of the marinade.  Cook through.  Then add the peppers, onions, and remaining marinate to the pan and continue cooking until the vegetables are tender-crisp.

Serve with black beans, salsa, and sliced avocado on medium flour tortillas.
