Broiled Lemon Rosemary Chicken
This is a recipe my mother, Susan Caldwell, made for us the other day. It is really delicious!
INGREDIENTS
4 chicken breasts
2 zucchinis, sliced in half lengthwise and then cut into chunks
5 smallish potatoes, quartered
fresh rosemary
juice of 1-2 lemons
4 T butter
salt and pepper to taste
cayenne pepper to taste
INSTRUCTIONS
Melt the butter and mix in the rosemary, lemon juice, salt, pepper and cayenne. Place the chicken breasts and potatoes in a baking dish and pour about 2/3rds of the sauce over. Broil until the potatoes are just starting to soften, about ten minutes. Add the zucchini and pour over the rest of the lemon-butter mixture. Cook about 10 minutes more, until the chicken is cooked through.
