Greek Chicken
Something I put together last night. I have cooked chicken in a similar way for years, and it always works well, but this one was particularly good. I just cooked the chicken alone last night, but I suspect the addition of kalamata olives, onions, or capers during the baking stage would be quite good. If you use the olives or capers, do reduce the amount of salt you would normally use as both are quite salty themselves.
4 boneless skinless chicken breasts
1/2 cup flour
2 T Greek Seasoning
Olive oil to saute
Salt and pepper to taste
2 t olive oil
1/4 cup lemon juice
Preheat the oven to 375F. Place the flour and the greek seasoning in a ziplock bag and shake to mix. Rinse the chicken breasts and place in the ziplock with the flour mixture. Shake to coat. Heat the olive oil in a saute pan, and lightly fry the chicken breasts, to brown on both sides.
Place the chicken breasts in a baking dish, sprinkle with salt and pepper, then drizzle with olive oil and lemon juice. Cover the pan with foil, and bake in th oven for 30 minutes. Check for doneness by cutting into the thickest part of the chicken breast and seeing whether there's any pink. If there is, give the chicken a few more minutes. Ovens can vary in temperature and chicken breasts can vary in size!
