Curried Pork Chops

This is based on something my mother used to make for dinner when I was young. I've been making it myself for years.

INGREDIENTS
4 Boneless pork chops
2 T olive oil
1/4 cup flour
1/2 t curry powder
1/2 t sage
Salt and pepper
1 onion, cut in half and sliced

Put the flour and seasonings in a zip lock bag and shake to mix.  Add the pork chops and shake to coat.

Heat the oil in a sauce pan .  Add the pork chops and saute until browned on both sides, about five minutes.

Place the sliced onion at the bottom of a casserole with a cover, then put the chops on top.  Add a small amount of water, cover and cook in a 350f  oven for around 40 minutes, depending on the size of the chops.  Test for doneness by slicing into the biggest pork chop and looking for pink.  If you see any, add cooking time.

Serve with the onions on the side, and fresh fruit or vegetables, and perhaps rice or couscous.
