Plum Upside Down Cake

This came about for two reasons.  My mother used to make apricot and pineapple upside down cakes, which I always loved, and I happened to see  some really yummy looking plums when I went to Costco yesterday.  I found the recipe in the Bon Appetit Cookbook, and here it is!

INGREDIENTS
12 T unsalted butter
1 cup brown sugar
1 T honey
6 large plums, cut in half, pitted, and sliced into 6 slices per half.
1 1/2 cups all-purpose flour
2 t baking powder
1/2 t cinnamon
1/4 t salt
1 cup white sugar
2 large eggs
1/2 t vanilla extract
1/4 t almond extract
1/2 cup whole milk

Preheat oven to 350°f.  Spray cooking spray inside a 9 inch cake pan.

Combine 6 T butter, the brown sugar, and the honey in a sauce pan and cook over low heat until the mixture is melted and smooth.  Pour into the bottom of the cake pan, then cover with the plums.

Mix the flour, baking powder, cinnamon and salt in a medium bowl, and set aside. With an electric mixer, best the remaining 6 T butter until soft and light.  Add the white sugar, and best until creamy.  Add the eggs and continue beating.  Then add the vanilla and almond extract, followed by a third of the flour mixture, then a 1/4 cup milk, another 1/3 of the flour, the rest of the milk, and the rest of the flour.

Spoon the batter over the plums, then bake about an hour and five minutes until a knife inserted into the center comes out clean.

Cool for 30 minutes, then invert onto a cake plate.

Serves 8
